Super Moist Venison Meatloaf

2.5 lbs ground venison
1 small sweet onion chopped fine
2 tsp. olive oil
3 cloves minced garlic
1 egg
3/4c bread crumbs
1/2c shredded cheddar cheese
1/2c BBQ sauce
1 tsp siracha hot sauce
1 tbs. horseradish
Kosher salt and black pepper (to taste)
1 tsp Spice Garden Mexican spice blend

Mix well by hand, form into meatloaf pan and cook at 400 for about 45 minutes until the internal temp reaches 160 degrees F.

Serve with a dollop of BBQ sauce or spicy ketchup.
