BBQ Bob’s “Drive the Neighbor’s Wild” Pulled Pork

1 8-9 lb. Bone-in Boston butt
1 bottle + 1 cup of apple juice
2 cups brown sugar
1 cup kosher salt
2 tsp of Worcestershire sauce
Dizzy Pig Tsunami Spin Rub
¼ cup of sugar in the raw (Turbinado Sugar)

Pour 1 bottle of apple juice into a sauce pan and place on stove over med/high heat. Once apple juice is hot, add brown sugar, kosher salt and Worcestershire sauce. Keep on heat for about 10 minutes and stir to dissolve salt and sugar.

Cool the marinade and inject half of the mixture into the pork butt.

Mix the Turbinado sugar with 3 oz. of Tsunami Spin and coat pork butt on all sides.

Set Tallboy to 250° F and place the pork in the center of the cooker with an aluminum drip pan directly underneath the shelf. Place 2 chunks of apple wood and one chunk of cherry in the firebox. Cook for about 14 hours or until the internal temp is 165° F. At this point.

Wrap the pork in foil and add ½ cup of apple juice marinade or ½ cup of drippings from pan into the foil with the pork. Place back on Tallboy and cook until the internal temp reaches 195° F.

Pull out of Tallboy and let rest in insulated cooler for 2-4 hours before pulling and serving with your favorite BBQ sauce on fresh rolls.
