Guinness Beef Jerky

Purchase a whole Sirloin Tip Roast and have butcher trim and slice into 1/8” slices.

½ cup of soy sauce
½ cup of Worcestershire sauce
2 bottles of Guinness beer
1 cup of brown sugar dissolved in hot water
3 tsp tender quick
1 bottle of hot sauce (your choice)
1 tsp black pepper
1 tsp garlic powder
2 tsp Dizzy Pig Cowlick Steak Rub

Allow meat to marinate in zip lock bags for 24-48 hours.

Place meat flat on Tallboy racks (every other shelf) and set cooker to 130°F

Use Cherry and hickory wood for smoke. Smoke for about 8-9 hours until meat is dry but still pliable.

Store in refrigerator
