Turkey Meatballs w/ Light Apple Wood Smoke

2 lbs of ground turkey
¼ cup of Parmesan cheese
½ tsp kosher salt
½ tsp black pepper
1 tbs of Italian seasoning
1 heaping tbs of minced garlic
2 eggs
1 cup of breadcrumbs

Mix all ingredients well by hand and roll into balls. I like to make them a touch smaller than a golf ball.

Place on a baking pan in smoker about at 325° F

Use a small hand full of apple chips for a sweet fruity smoke flavor.

When the internal temp of the meatballs hits 170° F, pull them out and serve with dipping sauces or place in homemade pasta sauce.
